Spaghetti Squash

Ingredients
  • 1 spaghetti squash
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 4 clove garlic, minced
  • 2 tomatoes, chopped
  • 1 green peppers, chopped
  • 3/4 cup crumbled feta cheese
  • 3 tbsp sliced olives
  • 2 tbsp chopped fresh basil
Directions
1. Preheat oven to 180°C (350°F).
2. Halve lengthwise spaghetti squash and remove seeds (can be clean, dry and salted as a snack).

3. Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes. Remove squash from oven, and set aside to cool enough to be easily handled.
4. Meanwhile, heat oil in a sauce pan, add onion and garlic in oil until light brown. Stir in the tomatoes, green peppers and olives; cook only until tomatoes are warm.

5. Use a large spoon to scoop the stringy pulp from the squash, and place ion plates. Toss with the vegetables, feta cheese and basil.
